Weekly Menu
When Thomas was a few months old I began planning our meals a week in advance. I was tired of standing in the pantry at 5:00 pm, hungry and tired, holding a clingy baby, and trying to figure out what to eat. Planning our meals in advance has made our lives much simpler. It also has the benefit of significantly reducing our food waste. No more vegetables languishing in the fridge without a purpose until I end up throwing them out. In addition, advance meal planning reduces our energy usage by limiting our grocery store trips to once a week. I generally plan meals on Wednesday night, go to the Farmer’s market on Thursday night (we walk and take the train), and go to the grocery store(s) on Friday night. It’s Thursday afternoon now. Here is the menu for this coming week:
Thursday: black bean torta
Friday: spinach and cheese pasta bake
Saturday: bell peppers stuffed with butternut squash and leeks, topped with feta cheese
Sunday: veggie burgers (I shall attempt to come up with a recipe for a soy-free, garlic-free, pepper-free burger), veggie kabobs, corn-on-the-cob, fresh fruit, and a turtle cake (We are going to try and make a vegan cake for Thomas and then shape/decorate it like a turtle. Perhaps we have been watching too much “Ace of Cakes”?)
Monday: pizza duet (one pear, gorgonzola, & walnut pizza, and one 3 cheese pizza)
Tuesday: malai kofta, brown rice, nann
Wednesday: Jeff cooks (Jeff likes to surprise us)
As time permits I’ll try to post the recipes for all of these on the recipes portion of our site.
My primary reason for posting our menus is to create a record of meal ideas so that eventually I can plan on an every-other-week or even a monthly basis.

I like the meal planning idea, especially because I am habitual about buying some sort of vegetable that I forget about until it is an unrecognizable lump in a bag in my vegetable drawer. I will have to attempt this myself.
